Amaranth vegetable Dalia (Rajgira Daliya)

Ingredients

1.100 gm Amaranth seeds, soaked for 3-5 hours
2. 1/2 tsp cow ghee
3. 1 tsp cumin seeds (jeera)
4. Pinch asafoetida (hing)
5. 10-15 curry leaves
6. 1 inch ginger
7. 1-2 green chillies, finely chopped
8. 1 medium carrot, finely chopped
9. 5-6 french beans, finely chopped
10. ¼cup green peas, finely chopped
11. Few spinach leaves
12. ¼ tsp turmeric powder
13. Rock Salt to taste
14. Coriander leaves for garnishing

Directions

1. Heat 1/2 tsp of oil in a pressure cooker.
2. Add cumin seeds and saute until the seeds begin to splutter and change color.
3. Add asafoetida, curry leaves, ginger, green chillies and mix well for 20-30 seconds.
4. Add all vegetables and sauté well for 1-2 minutes.
5. Now add soaked amaranth seeds, turmeric powder and salt and mix well.
6. Add the same water in which amaranth seeds and stir well.
7. Cover and cook till 2-3 whistles.
8. Amaranth daliya is ready.
9. Garnish with coriander leaves and serve hot.
10. You can serve it with green chutney
Tip: You can add other seasonal vegetables of your choice like onions, broccoli, mushrooms, pumpkin, etc., and cook everything together in a similar manner.
