Brown Rice vegetable Khichdi

It is a high fibre meal with many nutritional benefits.

1. Brown rice, 3/4 Cup (50g)

2. Green gram dal, 10 g

3. Peas, 1/3 cup

4. Carrots, 1/3 cup

5. Cauliflower, 1/3 cup

6. Cumin powder, 1tsp

7. Cumin seed, 1tsp

8. Ginger, 1tsp

9. Garlic, 1tsp

10. Coriander leaves, 1 Tsp

11. Pepper powder to sprinkle

12. Turmeric powder, 1/2tsp 

13. Cow’s Ghee, 1tsp

14. Salt to taste


1. Rinse and drain brown rice and green gram dal.

2. Place in a ground turmeric, and a large pinch of salt. Bring to a boil, then reduce heat to maintain a steady simmer and cook until rice and green gram dal are tender, stirring often.

3. Add vegetables and cook another 10 minutes, or until veggies are tender. Turn off the heat.

4. Meanwhile, heat ghee on medium heat in a sauté pan. Add whole cumin seeds, let crackle for 30 seconds, then add ginger, garlic, and chili and sauté another 30 seconds or until just starting to brown.

5. Add rice and green gram dal and water as needed to achieve the consistency of a thick porridge.

6. Add salt and pepper to taste and served with chopped coriander.
