Buckwheat Vegetable Bowl

It is a low calorie snack option, very easy to make and can take in Snack Option.

Ingredients

1. Uncooked Buckwheat- 1/2 Cup
2. Bunch Parsley, Finely Chopped- 1 ½ tsp
3. Bunch mint, Finely Chopped- 1 ½ tsp
4. Red Onion, Finely Chopped- 2 ½ tsp
5. Cucumber, Diced- 1/2
6. Tomato, Diced-1
7. Lemon- 1
8. Apple, Peeled and Chopped into Chunks- 1/4
9. Ground Cumin- 1/2 tsp
10. Olive Oil- 1/2 tsp
11. Salt and Pepper- To Taste

Directions

1. Cook buckwheat with 300 ml water in a rice cooker. Once cooked, rinse well with cold water and let drain.
2. Place parsley, mint, red onion, cucumber, tomatoes and buckwheat into a large salad bowl. Set aside.
3. In a liquidizer, blend lemon juice, olive oil, cumin and apple until smooth. Season with salt and pepper.
4. Toss with the buckwheat salad and serve.
