Oats - Tamato Soup

Ingredients

1. 1 cup quick oats
2. 1 cup chopped tomatoes
3. 2 cloves garlic – chopped(Optional)
4. 1 small chopped onion
5. 1 small chopped carrot
6. Rock Salt and freshly ground black pepper powder to taste

Directions

1. Heat the ½ tsp ghee in a non-stick pan add onions – garlic and sauté for 2 to 3 minutes.
2. Add the tomatoes and sauté for 3-4 minutes.
3. Cool the mixture and Blend the into smooth puree.
4. Transfer the pureed soup to a pan. Add oats and chopped carrot.
5. Add 2 cup water.
6. Allow it to come to a good boil. Add salt and pepper.
7. Serve hot.
