Roasted Cauliflower Salad with Almonds and Olives

1. Cauliflower- 1 Cup
2. Olive Oil- 1 tsp
3. Ground pepper- 1/2 tsp
4. Lemon Juice- 1/2 tsp
5. Garlic- 1/2 Clove
6. Crumbled Feta Cheese – 2 tsp
7. Slice kalamata Olives- 1/2 tsp
8. Toasted Sliced Almonds- 2 tsp


1. Preheat oven to 425 degrees F.
2. Toss cauliflower, 1/2 tablespoon oil, salt and pepper in a large bowl. Transfer to a large rimmed baking sheet; roast until tender and browned in spots, 15 to 18 minutes. Let cool for 5 minutes.
3. Meanwhile, place parsley, lemon juice, garlic and the remaining 1/2 tablespoon oil, salt and pepper in a mini food processor. Process until mostly smooth. Transfer to the large bowl. Add the roasted cauliflower, almonds, feta and olives. Toss to coat.
