Vegetable Diet Pasta

1. 1/4 cup chopped onions
2. 1/4 cup chopped capsicum
3. 1/4 cup blanched broccoli florets
4. 1/4 cup blanched chopped carrot
5. 1/2 cup chopped tomatoes
6. 1 cup Pasta – steamed cooked whole wheat
7. 2 tsp whole wheat flour
8. 3/4 cup low fat milk
9. 1 tsp olive oil
10. 2 tsp finely chopped garlic (lehsun)
11. 1/2 tsp finely chopped green chillies
12. Rock salt to taste


1. To make vegetable pasta, combine the milk and whole wheat flour in a bowl, mix well and keep aside.
2. Heat the olive oil in a broad non-stick pan, add the garlic, onions and capsicum and sauté on a medium flame for 2 minutes.
3. Add the broccoli, carrot, tomatoes and green chillies and sauté on a medium flame for 2 minutes.
4. Add the milk-whole wheat flour mixture and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring continuously.
5. Serve vegetable pasta immediately.
